It’s the weekend all over again so I’ve decided to dip into the cook books to see what I can conjure up tomorrow for dinner. The week has been positively mental, no idea where the past five days have gone and with the plan to do absolutely nothing on Sunday, Saturday is being designated as Italian day at Chez McGuire.
Last weekend I dipped the toes into Caribbean cooking with Levi Root’s Food For Friends book so this weekend it’s the turn of Catherine’s Italian Kitchen
by Catherine Fulvio. I picked up the book at the Savour Kilkenny Food Festival last month and I’ve been dying to try something from it ever since (largely due to sitting through Catherine’s cooking demo on the Sunday, the smells of the meat on the pan driving me wild with the hunger).
If you’ve been through the book and want to recommend anything yourself, please, be my guest. I’m thinking I’ll go the same route as last weekend so pick a nice type of starter or appetiser dish and a hearty main that could get a few meals out of whether for Sunday or frozen for during the week.
That said I’m looking at the following dishes for tomorrow
- Courgette and Thyme Frittata (or Frittata di zucchine e timo) – Page 27
- Meatballs in Spicy Tomato Sauce (or Polpette de carne in salsa di pomodoro piccante) – Page 172
The Frittata looks tasty as something to start with or have for lunch, the the parmesan might rule out the dairy-free side of things for herself, I’ll have a look at that tomorrow. The meatballs make for a good entry into cooking and something that could be (having picked up on it on Twitter earlier) frozen individually or made stretch for a few days.
I’m hoping it’s not too much of a challenge but I’m looking to get everything I need for under 20 quid as well. I got such good mileage out of the soup and shepherd’s pie last week that paying 20 quid for dinner for the week seems pretty sound to me.
